Introduction
There are meals that feel elegant and intentional…and then there are meals that feel like somebody wrapped you in a blanket and told you to stop trying to carry the entire universe by yourself for five minutes.
This is the second kind.
Creamy, savory, rich, and deeply comforting without requiring twelve pans and a culinary identity crisis. Traditional beef stroganoff usually comes with mushrooms, but I don’t want fungus ruining my emotional support pasta, so we are skipping that entirely.
The Instant Pot also does most of the work, which means more time to dissociate peacefully while pretending folding laundry counts as self-care.
Ingredients
- 1½ lbs stew meat or sirloin, cut into bite-sized pieces
- 12 oz fettuccine, broken in half
- 1 small onion, diced
- 4 cloves garlic, minced
- 3 tbsp butter
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- ½ tsp garlic powder
- 1 cup sour cream
- 1 cup freshly grated parmesan
- Optional garnish: parsley
Instructions
- Turn the Instant Pot to sauté mode. Melt butter and cook onion for 3–4 minutes until softened.
- Add garlic and beef. Season with salt, pepper, paprika, onion powder, and garlic powder. Sear for a few minutes until the beef starts browning.
- Pour in beef broth and Worcestershire sauce. Stir well and scrape up anything stuck to the bottom.
- Add broken fettuccine in a crisscross pattern so it doesn’t clump into one haunted noodle brick. Gently press pasta into the liquid without over-stirring.
- Seal lid and pressure cook on HIGH for 8 minutes.
- Quick release carefully. Stir everything well.
- Add sour cream and parmesan after pressure cooking. Stir until creamy and smooth.
- Let sit for 3–5 minutes to thicken before serving.
Optional Add-Ins
- Spinach
- Peas
- Crushed red pepper
- Extra Worcestershire for deeper flavor
- Cream cheese if you want it extra rich
Results
This tastes like something a tired Victorian woman would eat dramatically near a rainy window while contemplating her enemies.
