Introduction

I first learned about these when I was prepping for bariatric surgery, deep in that phase of life where you’re Googling everything you’re allowed to eat and trying to convince yourself it’s still “fun.” These little cheese crisps kept popping up, and I remember thinking…okay, melted cheese pretending to be a chip? I’ll allow it.

And honestly? They delivered.

Now they’ve become one of those things I randomly make when I want a snack but don’t feel like committing to actual cooking. Minimal effort, almost no ingredients, and somehow still feels like you did something. Which, at this stage of motherhood and life in general, is a win.


Ingredients

  • 1–2 cups shredded cheese (cheddar, parmesan, asiago, etc.)
  • Optional: garlic powder, Italian seasoning, paprika, ranch seasoning
  • Optional: bacon bits (highly recommend, past me knew what she was doing)

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Scoop about 1 tablespoon of shredded cheese per crisp onto the sheet. Space them out — they spread.
  3. Lightly flatten each pile so they bake evenly.
  4. Sprinkle any seasonings on top if you’re feeling adventurous.
  5. Bake for 6–8 minutes, until edges are golden and bubbly.
  6. Remove from oven and let them cool completely on the pan. This is where the magic happens — they crisp up as they cool.

Results

Delicious. Like, dangerously easy-to-keep-eating delicious.

They hit that salty, crunchy craving without feeling heavy, and you can absolutely make them your own. Add seasonings, throw in bacon bits, mix cheeses, whatever mood you’re in. I used to get a little chaotic with it, and honestly, those were some of the best batches.

They’re also perfect for dipping if you want to feel slightly more put together than just eating melted cheese off parchment paper. Ranch, marinara, even hummus if you’re feeling Mediterranean for no reason at all.


Storage

Refrigerator:

  • Store in an airtight container
  • Best within 2–3 days
  • Re-crisp in the oven or air fryer if they soften

Counter:

  • Fine for a day if your house isn’t humid
  • After that, they start losing their crunch
